One year at Christmas-time, Daniel wanted to make these delectible S’mores Cookies for his teacher gifts. Out came the stool, the ingredients, and off we went making sweets for the teachers in his life. I love that he likes to try his hand at cooking as he has a knack for it. Not to mention, later in life he’ll impress girlfriends by knowing his way around a kitchen.
Daniel really enjoyed making these. He layed out the graham crackers, carefully placing 9 chocolate chips on one graham cracker half and a jumbo marshmallow on the other. A few chocolate chips and/or marshmallows may have gotten popped into his mouth…you know, to make sure they tasted okay to use for the teachers.
Once they were baked and nice and melty, he assembled them together. We let the s’mores cookies cool and then melted some more chocolate chips to dip each s’more cookie about half-way. Then he added a variety of sprinkles to the cookies…leaving a few without sprinkles as the chocolate was the best part for him. He is my fellow choc-o-holic in the family!
Finally, we had to let the S’more Cookies cool before packaging them up for the teacher gifts. He made some teachers smile with this sweet gift from a sweet boy!
S'mores Cookies
Ingredients
- 16 Graham Crackers *
- 16 Large Marshmallows **
- Chocolate Chips
- Sprinkles
Instructions
- Preheat oven to 400 degrees
- Line a baking sheet or tray with wax paper and set aside
- Split the graham crackers in half and lay on another baking sheet
- For each pair of graham cracker halves, place 9 chocolate chips one one and a jumbo marshmallow on the other **
- Once filled, place the baking sheet in the oven watch carefully as it will only take a few minutes to melt the chocolate and heat up the marshmallow
- Pull out when the marshmallow color is to your liking
- Place each chocolate covered graham cracker half on top of a marshmallow one and place on the cool baking sheet or tray set aside earlier lined with wax paper
- Allow to cool, if you are short on time you can place in the refrigerator or freezer to cool quickly
- Melt chocolate either over a double boiler or in the microwave ***
- Dip half of each cookie into the melted chocolate and place on the wax paper lined baking sheet or tray
- Decorate with sprinkles, as desired
- Allow to cool before eating or packaging up for gifts
